The USDA says domestic red meat and pork production
both hit all-time highs in 2018.
Red meat totaled 53.508 billion pounds, 3% higher than 2017’s then-record of 52.079 billion, with 837 plants operating under federal inspection on January 1st, 2019, and 49% of annual production occurring in Iowa, Nebraska, Kansas, and Texas.
Pork was reported at 26.330 billion pounds, also up 3%, with a 3% increase in the commercial slaughter at 124.435 million head and a 1 pound gain in the average live weight to 283 pounds.
