U.S. cheese production during August 2017 was 1.028 billion pounds. That’s up 2.3% from August 2016 and the sixth month in a row above a billion pounds. February has been the sole exception this year, primarily because of fewer business days. Export demand is slow because of increased competition and U.S. supplies have been at or near record highs several times this year, but domestic cheese demand is solid and milk production has been running at faster than a year ago levels.
