A food safety professor was the star witness yesterday in the South Dakota defamation lawsuit trial involving Beef Products Incorporated (BPI) and ABC News.
Mindy Brashears, who heads the International Center for Food Industry Excellence at Texas Tech University, said she has made several visits to BPI’s South Sioux City meat plant to test the company’s “lean, finely-textured beef”, which is called LFTB, for short.
“First of all, I have concluded that LFTB is meat,” she testified.
