The National Pork Producers Council says updating the USDA’s “pork slaughter” rule has the potential to increase hog slaughter capacity in the U.S.
The Food Safety and Inspection Service updates to the slaughter rule would shift food safety responsibilities from federal inspectors to packing plant workers. NPPC says the changes would increase efficiencies and effectiveness of the federal inspection process.
Five pork processing plants in the U.S. are partnering in pilot projects.
